Zucchini Bars

1 c. oil

2 c. white sugar

3 eggs (add one at a time)

1 t. vanilla

2 c. flour

1/4 t. baking powder

2 t. soda

1 t. salt

3/4 t. rolled oats

2 c. grated zucchini

1 c. chopped nuts (optional)

Frosting

1/2 c. margarine

3 oz. cream cheese

1 T. vanilla

2 1/2 c. powdered sugar

1/4 t. almond extract

Preheat oven to 350*. Mix together & pour into a greased 10X15 " (I always use a 9X13") pan. Bake 25-30 minutes. Cool. Mix frosting until smooth; spread on bars.

Refrigerate any leftover cake.

We will miss you Ed. You were a great neighbor & always willing to help when needed. We will miss seeing you drive down the driveway to check your mail every morning & seeing you putting around on your lawn mower across the field. We will miss your smiling face & the way you bounced when you giggled. God must have needed your help in heaven.
